How to make chicken burritos with rice?step by step easy recipe


Prepare delicious Mexican chicken burritos at home easily with this step-by-step recipe.

INGREDIENTS:-

To make the chicken filling:

1 boneless chicken breast (800 gr

2 bay leaves

red pepper (200 gr)

1 green pepper (200 gr)

1 large white onion (300 gr)

2 medium tomatoes (300 gr)

2 green chilies (optional)

½ tsp. cumin powder

½ tsp. garlic powder

chopped fresh cilantro (or dried)

extra virgin olive oil

Salt and pepper

To make burritos

12 flour tortillas

grated melting cheese (optional) 2 ½ cups (200 g)

3 cups lettuce (chopped)

2 cups of rice (boiled)

STEP-BY-STEP PREPARATION:-


Step 1: TO COOK THE CHICKEN

Wash the chicken breast, put it in a pot, and add a piece of onion, a little salt, and the bay leaves.

Cover meat with water and boil until chicken is fully cooked. You can use the fast cooker if you want to cut down on wait times.

The next step is to shred the chicken, and that can be done in two ways:

The first is by hand, and for this, let the meat cool until it is possible to shred it without burning your hands.

The second can be done when the chicken is still hot, for this, you can put the meat in a separate blender, which is cut into two large pieces and beat at low speed for a minute or until the meat is shredded.

Step 2:- TO PREPARE THE FILLING:-

Peel the peppers and cut them into strips or pieces, as you prefer. Peel the onion, chilies, and tomatoes. Chop them all and set them aside separately.

In a pan, heat two or three tablespoons of oil, and first fry the peppers with medium heat for approximately two or three minutes.

Next, add the onion and green chilies, and fry until the onion is almost golden brown, and the peppers are soft.

Then, add the tomatoes, mix it all, and let it take flavor for 2-3 minutes. Add the chicken breast, and season with salt and pepper, cumin, garlic powder, and finely chopped cilantro.

Add a cup of chicken broth in which the breast was cooked, and mix. Bring it to a boil, cover the pot, and cook the mixture for 15-20 minutes.

Uncover the pan and let almost all the liquid evaporate, and the mixture should result in a dry preparation.

In another nonstick pan, heat a flour tortilla until soft. Put some lettuce in the center, then some boiled rice, and finally the cheese. The cheese is optional and could be added, and it melts well.

Roll up the tortilla carefully so that the preparation cannot come out.

IMPORTANT POINTS:-

If you use chicken left over from other preparations, you will need approximately 2 compacted cups of shredded chicken.

Flour tortillas are found in many supermarkets or you can make your own with our flour tortillas recipe.
